Herb-Roasted Chukar or Quail 🍋🌿
Quick to cook and rich in flavor, these herb-roasted quail make a perfect rustic main course for a cozy dinner. Great served with wild rice or root vegetables.
Ingredients:

4 whole quail (Bobwhite or Chukar), cleaned and patted dry
-
2 tbsp olive oil
-
1 ½ tsp salt
-
1 tsp black pepper
-
1 ½ tsp garlic powder
-
1 tsp dried rosemary or thyme
-
1 lemon, quartered
-
Optional: fresh parsley or thyme for garnish
Instructions:
-
Preheat oven to 450°F.
-
Rub each quail all over with olive oil. Combine salt, pepper, garlic powder, and herbs in a small bowl and season the birds evenly.

Stuff a small wedge of lemon into each cavity.
-
Place quail breast-side up in a baking dish or cast iron skillet.
-
Roast for 14–16 minutes, or until the skin is crisp and internal temperature reaches 160°F.
-
Remove from oven and let rest for 5 minutes.
-
Garnish with chopped fresh herbs and a final squeeze of lemon before serving.
Best with: Bobwhite or small Chukar
Tip: For even browning, baste halfway through roasting or use a convection setting.

Butter Chukar 🧈🍛
A rich and cozy farm take on classic butter chicken — made with tender chukar breast for a wild twist that melts in your mouth.
Ingredients:

2 Chukar breasts, deboned and cubed
-
2 tbsp butter (divided)
-
1 tbsp olive oil
-
1 small onion, finely chopped
-
2 garlic cloves, minced
-
1 tbsp grated ginger
-
1 tbsp garam masala
-
1 tsp turmeric
-
1 tsp cumin
-
1 tsp paprika
-
1/2 tsp cayenne (optional)
-
1/2 tsp salt
-
1/4 tsp black pepper
-
6 oz tomato paste or 1/2 can crushed tomatoes
-
1 cup heavy cream or coconut milk
-
Fresh cilantro, for garnish
Instructions:
-
Heat 1 tbsp butter + olive oil in skillet over medium heat.

Sear cubed chukar for 3–4 minutes until browned. Remove and set aside.

Add onion, garlic, and ginger. Sauté until soft (5 min).
-
Stir in spices and cook until fragrant (1 min).
-
Add tomato paste and stir. Cook for 2 minutes.
-
Stir in cream, remaining butter, and return chukar to pan. Simmer 8–10 minutes until tender.

Garnish with fresh cilantro. Serve with rice or flatbread
Best with: Chukar Partridge
Tip: Great for leftovers — even better the next day!

Inside-Out Poppers (Quail or Chukar Style) 🥓🔥
All the bold flavor of jalapeño poppers, farm-style! These inside-out bites flip the script: the meat wraps the spice and creaminess inside.
Ingredients:
-
breast halves from 6 Quail or Chukar
-
3 oz cream cheese (softened) or Boursin or Feta
-
2–3 jalapeños, finely diced (seeds removed for milder heat)
-
1/4 tsp garlic powder
-
1/4 tsp salt
-
6 slices thin bacon
-
aluminum foil
Instructions:
-
Preheat grill to medium.
-
In a small bowl, mix cream cheese, diced jalapeño, garlic powder, and salt.
-
Pat each breast halve - you will use 2 per popper.
-
Spoon a bit of filling into the center of one, then sandwich with the other.
-
Wrap each stuffed breast with a slice of bacon and then wrap with foil.
-
Bake or grill 20–25 min until bird is cooked through (internal temp 160°F).
-
Carefully remove foil - bacon should be squeezing the popper together.
-
Grill until bacon done to your preference,
-
Let rest 5 minutes before serving.
Best with: Quail or small Chukar breasts
Tip: Serve with ranch or honey mustard dip on the side!
